A success on the whole line
Very good meal, excellent sakés and hair service, mastering solids and liquids (sake, wine, whisky. A few regrets, however, that the leader does not let himself go any more. Certainly very well executed (fats and crust candy, girolles cepes and eggs mullet , one smells on some dishes the heavy influence of the old French gastronomy a little pumpy and bourgeois (caviar osciètre pas des plus flagrants , relieves quite fortunately some golden spices (purée de panais à la badiane, jus de meat au pepperi Tulich Some exotic facilities in a revisited Norman hole (mango and coconut milk? for a pina colada not the most Japanese. Given the sourcing of liquids and fish already well done, a small extra work on seasonal herbs would eventually make it one of the most promising restaurants. See you soon.
