Nothing to excel on raw material. The beef carpaccio is found in the mouth like butter; slices of tender and juicy meat; a cut cooked at the right point. But on the cut it can be done better: I asked it condita con aceto balsamico, grana e rucola but it has come with only a shadow of cheese placed between the other side of the dish and with very little balsamic vinegar.
