However, I went in today for a boba tea and was pleasantly surprised to meet the new owner. We had a lovely chat and I decided to try the Pho (specifically the P2) which was absolutely delicious. The quality of the food went from a 5/10 to a solid 10/10! The new owner, who I believe mentioned her name was Tavi, is a friendly and welcoming woman who really enhances the dining experience.
This is the best pho I have had in Colorado. The broth is super flavorful with a variety of noodles to choose from. You don't even need to add hoisin or sriracha sauce, which I usually do at other pho restaurants. The portions are modest compared to other places, but the generous amount of meat and vegetables make it a satisfying meal rather than just a bowl of bland noodles. It is clear that this restaurant is family-run, which adds to the authentic feel of the food. It tastes just like the pho you would have at your Vietnamese grandmother's house. This is definitely my new go-to spot for pho.
The experience was fantastic! I attempted to place a takeout order over the phone, but the call didn't go through. Since I live nearby, I decided to stop by in person to place my order. The restaurant had been renovated and I had the opportunity to meet the new owner, who was incredibly friendly. The service was quick and efficient.
The food was absolutely delicious. I had steakpho, pig dumplings, egg rolls and a coconut boba. It was all top notch. Unbelievable. The only thing that wrestled with my experience was the loud individuals who demanded more food.
I was here a few times, but this time I'm not sure if I came to a bad day, but the pho had so much fat in it. Previously on a clear broth. I've never found a bung in my pho a piece along with a heavy hand of red pfefferflakes that never saw in pho. the pho some as tasted a little like tomaten and my garnel noodles had no garnel, not even a fiber band will probably not be back after this experience. especially after I had seen what seemed to be homeless people coming out of the kitchen.
