I took the vegan Unagi class personally (only before COVID). The class was full of English and gave a fresh take in Japanese cuisine. The class was the perfect opportunity to learn more about traditional vegan cooking techniques in Japan, various ingredients and what they are for (together with the rich history behind them). It was the perfect farewell to my stay in Japan Also, Kayo sensei and the owners, Akiko and Rina were amazing. They also taught me about all possible substitutes, as I soon went back to Europe.
