SIDECUT Modern Steak + Bar - Whistler

Came here for breakfast._It's off-season but still very cozy and accommodating.

This is the best meal I've had in Whistler so far. Exceptional service as expected at Four Seasons.

Ate here with a table of four in August, 2017. The appetizers were superb; massive mussels in a lusciously savory broth and oysters so fresh the brought the sea to my palate. The bread and herb butter is to die for. Pre dinner craft cocktails were also excellent; inventive and served with style. But then things fell apart with the mains. My wife and I had red snapper and it was overcooked and dry. We also ordered sides. The broccoli was cooked to perfection and the garlic mashed potatoes found the sweet spot between too dry and too mushy. The cauliflower was, like the fish, overcooked. Another guest in our party ordered a ribeye steak. It was good, but stringy and not the great we expected. Deserts were also just OK. Almond cake was chalky, and the chocolate mousse desserts seemed haphazard. The service was excellent. Wait staff kept our water glasses full and served and removed our drinks and plates with unobtrusive grace. In sum, the service was tops, but the food both great and average: not at the steadily high level I've come to expect from the Four Seasons or other restaurants at this price range--which leads me to be more picky than I might be of a restaurant at a lower price point. In sum, I'd say that Sidecut is good, but lacking in the consistency you'd expect from a restaurant in its fine dining price range.

Beautiful restaurant. First class service, food, atmosphere. Steak, amazing, sides awesome. 6oz tenderloin was just the right size. Highly recommend panna cotta and creme brûlée. Sat out on the patio, beautiful view. Food came out in good time. The BBQ they have Thursday nights in summer are wonderful too.
