There is a common thread in this restaurant that unites Tradition, modernity and taste. In the dishes you will find the union of different ingredients which, in the eyes of those who go for the first time, may seem like strange combinations . Then when you go to eat them every single ingredient emerges without overpowering the other in a perfect balance. A lot of work and passion research and study. Nicoletta, the young chef, very nicely explains each course and advises you without being intrusive. Absolutely worth trying
The restaurant that will put Foligno back in the Michelin guide. To try and try again! Wild herbs and typical Umbrian ingredients are reborn in the expert and talented hands of the young and heroic) kitchen team. The egg, chicory, potato and truffle cream is moving and daring. The grilled snails are surprising. Memorable spaghetti with salicornia. And then the comfort food that I would like to eat every evening: the non-soup made from gramigna, black chickpeas and wild garlic. The desserts are unmissable, they gain in harmony and lightness what they lose in sugary predictability. Each dish is a surprise of authentic flavours, cooked with great intention and enormous talent. Well done and thank you. Two tasting menus €40 and 60); average price €50. The Genoese lamb and fig risotto in giardiniera is brilliant. The guinea hen with yellow datterini tomatoes is perfectly juicy and diluted in its juice acidified by the umeboshi. Finally, the desserts: the honey tiramisu that you haven't yet encountered no matter how blasé you are and a perfect creamy briquette with apricot and marigold gelé.
