El Imperial - TUXTLA GUTIÉRREZ

I first ate here about thirty years ago -- and it's still going strong. There is a very ample menu with standard Mexican eats (enchiladas, mole, tacos and the like) and food typical of Chiapas (cochito and chiles rellenos). The quality and service remain topnotch in a very simple setting right on Tuxtla's main square. I have most often arrived for breakfast and recommend "la torta de huevos," an omlette with stewed tomaytoes, chiles and onions, which isn't on the menu. There is at least one handsome waiter.

I have arrived most often to the breakfast and recommend la torta de huevos an omlette with stuffed tomaytoes, chiles and wobbles that is not on the menu. there is at least one pretty waiter.
