The Prospect - Town of Hunter

I celebrated my husband's birthday with a dinner at Prospect during our weekend in the Catskills, and it was a wonderful experience. The atmosphere is inviting and cozy, and the food is fantastic. When I mentioned that I am vegan, our waitress took the time to highlight the different vegan main dishes and side options available, even offering a delicious vegan dessert. I highly recommend this place for a peaceful dinner in the Catskills.

This is a lovely restaurant situated in the heart of the Catskills Mountain region. While dinner was enjoyable, it didn’t quite reach excellence to earn a full 5 stars. The Garden Salad featured vegetables that were supposedly grown locally in their own garden, which made it a delightful addition, especially with the toasted sunflower seeds. For my main course, I chose the Highland Hollow Pork Chop. Although it was flavorful, the particular cut I received had quite a bit of fat, making it somewhat challenging to eat. I usually appreciate some fat on my meat, but this was just a bit too much for my liking. On the other hand, the sides of shishito peppers and potatoes were fantastic. I found the olive oil cake for dessert to be a real treat. I would definitely return to explore more of the menu.

Incredible. Every single dish we had for breakfast, lunch, and dinner was outstanding. Even the Greek yogurt at breakfast amazed me. For dinner, we opted for a variety of sides as appetizers, and that was definitely the right choice. The more you can sample here, the better, as everything is uniquely crafted and exceptionally delicious. Just order as much as you can so you’ll have stories to share for days, months, and even years to come. And of course, the ambiance is fantastic.

Overall great experience. Sat at the bar with Christopher, who is not only a fantastic bartender but also a friendly and personable guy; the drinks and his service were the best part! The trout toast was a hot and the perfect portion for two. Theburgers were great and accompanied by some amazing fries. I’ll be back!
