The tempo of the service felt rushed, pushy. there were some very simple tastes that were above all lacking of meat dishes, which is important for these classic plates and made the food blandes: limette, zwiebel, zilantro, chiles, salsa, hot soße. when we finished our last dish and I mentioned that heat was so lacking, we were brought a hot sauce, we could add to the last bite for which we were also charged $2. two glasses of red wine through the glass were ordered and full on the table cast, which fell out of service perspective from what I would expect from a restaurant of this kaliber, what I would say was my general disappointment of the entire experience both in terms of eating and in terms of service. the best dish we had was the amberjack aguachile, but the very flat coating of the sauce and the very thick spoons that we were given to eat it with, made it almost impossible to actually make any of the aguachile in every bite as recommended by the server.
That was great. cordial gratitude to all fabulous chefs in quetzal for the Michelin star. they really deserve it. we have often been in the pass before the kovid, and finally we have been able to come back, and we have been able to find out how the food, the dishes have gone to a much better level of quality and complexity. Thank you.
There is a reason why this place has a Michelin star! from the moment when we entered the place, the service was fabulous! matthew, one of our server or jack of all trades as we called it, was amazing how the rest of the staff! we had the tasting menu and each dish was better than the last and the wee recommended were excellent. we had a wonderful experience!
While the food was good, I don't see the Michelin 1 star quality in it. Having that said, the price was way cheaper than other Michelin 1 star restaurants.
