The Eggs Benedict with caviar here is exceptional - the quality of the salmon, hollandaise sauce, and bread is perfect. The dish is well balanced and visually appealing with a sprinkling of chopped chives. The restaurant also offers other menu options, good coffee, and drinks. Service is fast, making it a great choice for a meal in the airport. Highly recommended.
This is about the seafood bar airside in the international terminal of Sydney airport (to the left of the main duty free area):Sometimes there's a place where you can see someone has put a lot of effort into making a relatively simple dish perfect. I'm a big fan of salmon eggs benedict and have had it at plenty of upmarket breakfast places around the world, but Caviar House & Prunier takes the crown. The eggs benedict here are so good I actually look forward to flying out of Sydney just so I can taste them again!The perfection of the dish is due to the quality of the salmon which is some of the best; then the hollandaise sauce which appears to have been freshly prepared each time and is of exactly the right consistency and taste, and the bread on which it is served, which is relatively thin but because of this, and the way it is prepared, provides a precise balance with the rest of the dish. Elsewhere, too often eggs benedict are served on bagels or buns or thick slices of bread which throws the dish off balance. A sprinkling of chopped chives provides a color accent that completes the visual presentation of the dish. They also serve other foods (never tried them), very decent coffee, and drinks to go with the meal; service is usually fast as can be expected in an air terminal. Typical waiting time between ordering the dish and it being served is around 10 minutes. Highly recommended.
