The Laughing Aztecs - Salisbury

I had the opportunity to visit Laughter Azteken during an art exhibition at the Guild market in Salisbury. I have never tried Mexican food in Mexico or the southern USA, but this restaurant provided what I imagine to be authentic Mexican cuisine: satisfying, rich in flavor, not overly spicy but with hints of chili. The dishes were beautifully presented in compostable/recyclable packaging, and all items on the menu were available in vegan versions. They have the flexibility to customize dishes by adding or removing any ingredient. They even offer vegan desserts! Although we were too full from enjoying the amazing quesadillas (filled with soy mince cooked with poblano chilis, roasted beans, and vegan cheese, topped with avocado, radishes, and cilantro) to try them, I would definitely recommend a visit. I would give them 5 stars, but unfortunately, they cannot be rated as such on Happy Cow because they also serve animal products.

I was fortunate enough to stumble upon The Laughing Aztecs while visiting an art exhibition at the Guild Market in Salisbury. The food was presented beautifully in compostable/recyclable packaging, and every item on the menu had a vegan option available. You can customize any dish with additional toppings as you please. They even offer vegan desserts! We were too full from enjoying their delicious Quesadillas (stuffed with soy mince cooked with poblano chilis, refried beans and vegan cheese, topped with avocado, radishes and cilantro) to try them, but if we have the chance to go back, we definitely will. I highly recommend giving this place a try, you won't be disappointed. I would give it 5 stars if I could, but unfortunately Happy Cow does not allow it since the restaurant also serves animal products alongside vegan options.
