Mama Inez - Pocatello

My connection to Mama's goes back to 1993 when I lived there for six months. My friends and I frequently visited Mama Inez's (affectionately known as Mama's) for some fantastic food. The chips and salsa are outstanding, and the beans are exceptional too, with a wide variety of salsas that provide an array of flavors and levels of heat. Unfortunately, after discovering the Chili Colorado, I never ordered anything else from the menu. Once I tried it, I always got the large plate with double beans because it was simply too delicious to resist. Chili Colorado is something I truly miss from my five years living out west. Every member of our group also loved their meals every single time we went. If you're driving through Idaho Falls on I-80 and see the Shilo Inn sign while searching for a great Mexican restaurant, be sure to stop and ask anyone for directions to Mama's. The friendly locals will guide you—it’s just a couple of minutes off the highway. One more thing I want to note, especially as someone from the Midwest now living in Wisconsin, is that if your dish comes with cheese, be prepared for a generous layer on top. The chefs definitely don't skimp on the ingredients when crafting their amazing dishes.
