Oh, I was so thrilled to come across this restaurant on the way to Costa Rica! The airport in Cuba had limited vegan options, so I was relieved to find this small sandwich shop in Panama. While they didn't have non-dairy milk for coffee, they offered a variety of fruit juices. The sandwich was massive, filled with eggplant, pickles, carrots, alfalfa sprouts, and possibly some root vegetables. It was a refreshing break from cramped airplane food and a safe choice for me as I continued my journey. Overall, it was a satisfying stop on my trip.
