Organik was a wonderful place to find in nuevo vallarta. they serve acacia dishes and poke dishes (e.g. buddha bowl) for breakfast and lunch. soy lattes and other coffee items are available. service is on the slow side, but it is worth it because there are not many other options in the opposite. note that they can walk there from the vidanta resort over the beach.
