In an unattended non-turistic street, Palosanto delivered an excellent lunch for a very reasonnable price. A plus for the delicious main plate based on a local recipe ! Ideal for couples or business lunch. Say hello to the team, they are very friendly.
It is clear from the modern, minimal and inviting interior to the classic and curious flavors that everything at Palosanto is intentional, crafted with care. As a tourist, the charm of Nimes on a sunny autumn day mixed with the chance to enjoy eating with...your eyes closed is a pleasure I'd recommend to anyone passing through. You can't beat the prices either. Today's meal began with a velvety celery root soup with shredded crab in every spoonful topped with buttery croutons. The main was chicken tenderloins over roasted rainbow root vegetables, mimicking the changing colors outside; simple, seasonal, satisfying. And dessert... the dessert! A roasted apple for depth and texture, tart and refreshing passion fruit coulis and sorbet for zip, black and bitter chocolate for balance and the occasional burst of a coriander seed that keeps you curious, locked in the present moment. I'm going to be dreaming about that soup for months!
We stumbled upon this restaurant to the north of the Arènes. It opened three days ago so nothing but luck brought us there. There was only one other person in the restaurant at lunch time. The restaurant was modernised by the chef 's own hands. The...decor was light grey, the floor a modern darker grey cement, the tables bleached white wood and the chairs comfortable budget chairs. The interior was calm, with gentle music, some of it Latin American, playing in the background. The atmosphere was inviting, a nice shelter from the extreme Mistral that has been blowing all week. The menu consists of three courses, but you can have one two or three of them. Each course has a choice of three or four items; at least one vegetarian, a fish and a meat for each. The ingredients are seasonal and change at least once a month according to what the chef finds in the market. The chef, who looks younger than his years, and works on his own, was trained at various different restaurnats including two Michelin two star restaurants and it shows in his inventive, delicate cooking. We started with an amuse bouche, on the house, which consisted of marinaded radish with red onion and grated garlic, cauliflower and sesame seeds, a delicate palette cleanser. I followed this with cod cooked in a broth of coconut juice and lemongrass, served with carrots, roast potatoes, roast garlic and raw fennel. My wife had sea bream dusted with paprika, quinoa flavoured with orange flower water, roasted fennel, carrots, brussels sprouts and cauliflower with a light emulsion. The portions were generous, the cooking very fine. I washed this down with a lovely glass of rosé at a very reasonable 4 euros. My dessert was a light, frothy milk jam flavoured with lemon, a mouthwatering lime sorbet in an almond tuile, choux pastry filled with the milk jam, all on a coulis of caramel. My wife had strawberries delicately flavoured with a red wine and corriander reduction, a sprinkling of fresh coriander leaves and a small, not too sweet meringue. Everything was home made, tastefully presented and cooked with pride, each taste perfectly blended but possible to detect separately. The service was friendly and attentive. The bill came to 49 euros. You can 't beat that, and unlike many fine dining resstaurants, we did not come out feeling hungry. I can 't wait to go again. Only 18 places in the restaurant so once it gets going you will need to book.
A refined cuisine, fresh products with flavors, interesting textures and beautiful blends. a very friendly welcome and a very sweet price including on wines. We went there on noon and evening and it's frankly a treat every time. Small word for the owners the place is discreet can be a little too much because you can pass by without almost seeing it. The proposals of the chefs would deserve to be put more forward (great slate, tables ....)
