This time, I ordered the recommended Cantonese noodles in large portion. The noodles are medium-thick and curly. Despite being Cantonese noodles, the sauce is not too thick or sweet. The dish includes shrimp, quail eggs, and crab meat on top. The white cabbage stems are cut quite wide along the fibers, which I found surprising, but it turned out to be the right choice. The soup is not too thick, not too thin, not too sweet, and not too salty. The aftertaste is also satisfying. The last time I had this was 40 years ago when I was attending driving school. I'm sure the chefs have changed and the ramen has evolved since then. I never expected to find such a good ramen shop nearby. I was honestly caught off guard. The price is a little over 1,000 yen, but I think it's worth it.
