Both the Taiwan ramen and Taiwan mazesoba were generously topped with minced meat. There was a layer of chives and bean sprouts underneath, giving it a powerful presence. I was surprised to find that they use curly thick noodles typically seen in Jiro-style ramen, similar to knife-cut noodles. The ample amount of chili oil added to the dish and the delicious flavors made it a great value. I was happy to be able to enjoy a hearty bowl of Taiwan ramen. Apparently, it's a limited-time offering, so I hope they make it a regular menu item! By the way, the restaurant may not be the most visually appealing, but they were handling COVID measures adequately by wiping down tables before seating guests. However, for those who are sensitive, it may be best to avoid or refrain from complaining.
Although it is a Jiro-style ramen restaurant, the chashu is quite delicious. The noodles are chewy and the garlic and oil are well-balanced. In fact, when I worked at a branch, the assistant branch manager recommended it to me, and I finally had the opportunity to visit. It's a taste that I would like to revisit.
