The original owner, who operated from 6am to 2pm daily, helped customers overcome their hunger by offering two delicious soups. In 2008, a new owner took over and decided to franchise the business in order to share their famous soup with more people. The flagship franchise store is a two-story restaurant located in a central district of Jeonju, offering an extended menu and a comfortable atmosphere. While all soups contain broth and are not suitable for vegans, there are three menu items available for them. By using food-tech meat substitutes, vegans can enjoy options like Soy-Meat Bulgogi or Soybean Sprout Rice Bowl. The side dishes may contain fish products, but the sweet soybeans, roasted seaweed, and sesame oil are safe for vegans. Adding some vegan spicy sauce to the rice bowl enhances the flavor, and a spoon of cold soy soup is served separately as a vegan option. The soybean sprout rice bowl is a personal favorite, offering a hearty meal with rice, soybeans, and dried vegetables. Non-vegan friends have been pleasantly surprised by how delicious the vegan options are. I highly recommend Hyundaiok for a satisfying meal in Jeonju, whether it's late at night or early in the morning.
