We shared a spinach Caesar salad, and I opted for the pizza called "Panchetta Brie-lieve It." I was thrilled with the meal — there was no reaction, and I’m quite sensitive to gluten. My partner can eat gluten and thoroughly enjoyed his whiskey flight and the gluten-containing pizza named “Full Denim Tuxedo.” I can't wait to go back!

The staff explained that they do their best to prevent cross-contamination, but they did mention that wheat flour is still present in the kitchen. The thin crust pizza was unique, but not extraordinary. Despite that, the restaurant had a great atmosphere—it's a fun spot to grab a bite and hang out with friends!

We visited this past weekend and had two gluten-free pizzas. They were, by far, the best we've ever had! Another reviewer mentioned that the crust tasted like corn, and that's because it is made with corn flour. It's a unique and really delicious twist!

I wanted to share our wonderful dining experience at The Civil in Kitchener from last night. We enjoyed delicious handmade gluten-free pizzas, fresh salads, and delightful cocktails. I ordered the margarita flight, and it was absolutely delicious. I even had a chance to talk to the chef, who has celiac disease himself. He developed the gluten-free crust recipe while making arepas and thought it would be perfect for pizza. He was right! The crust is made with just three ingredients: masa corn flour, egg, and water. It has a slight corn flavor but is overall extremely tasty, with crispy edges and a nice bottom.
