I like the Oreo cookie approach of reviews good, opportunities to improve and ending with great. Jose's parking lot was promising as there were several vehicles even into the overflow dirt lot. My husband and I were starving and happily went inside where we were warmly greeted by 2 employees and seated. Our friendly waitress arrived quickly and took our orders. Sadly, the horchata I ordered left an aftertaste that reminded me of chemicals. My husband ordered the chicken enchilada combination. The chicken was delicious and more like chicken fajitas complete with grilled onions and bell peppers with a sour cream sauce on top. His only complaint was that he was given whole beans instead of refried. (The whole beans tasted like ham). I ordered the cheese enchilada combo plate. I was disappointed to learn that they did not have either the traditional Mexican enchilada sauces of red and green chilies. Instead, I was told that they had a chili sauce (think chili con carne), sour cream, or queso sauce. I chose the sour cream sauce. The enchiladas had A LOT of cheese but sadly no flavor beyond the taste of the cheese. I literally had to hunt to find any trace of the enchilada sauce. I poured their tomato sauce tasting salsa on one of the enchiladas and their green salsa (I'm thinking it was blended up cilantro with spices) on another one. The salsas helped, but definitely did NOT make the enchiladas anything to brag about. The rice was blah. Unlike my husband's enchilada combo plate, mine came with refried beans which were yummy. In conclusion, the service was excellent, decor and music were fun and inviting, the food left a lot to be desired. We will not be returning.
