The beet salad was another highlight, featuring beets over a bed of arugula, drizzled with a tangerine chili vinaigrette. The warm goat cheese, crusted with sweet corn, was the star of the salad and absolutely delicious. For the main course, my wife chose the daily special: a flat iron steak, served with a unique twist on mac and cheese that used chickpeas instead of pasta, resulting in that comforting mac and cheese flavor. The steak was cooked to perfection. I opted for the double-cut pork chop, which came not with mashed potatoes but with a fascinating “mescal-spiked celeriac puree”—it resembled potatoes but tasted like mashed turnips, a delightful surprise! The pork chop was topped with a light, slightly sweet, and tangy strawberry glaze. We had made our reservations in advance and had no issues getting a table; there were still open seats when we finished our meal. I recommend calling ahead, as Agave Grill is becoming quite popular in the Denver area and may get busier. The service was nearly impeccable—though my wine glass was temporarily overlooked, the staff quickly attended to me as soon as I reached for the bottle myself. The atmosphere turned romantic when the lights dimmed at 6:30. If you're looking for a bland dining experience, this isn't the place for you. However, if you want to explore new spices, enchanting Southwestern flavors, and a bit of heat, definitely make a reservation at Agave Grill. We can't wait to return and share our experience with friends—it's an excellent place for adventurous eaters!
