Strong touch of East asian (Japan). Pleasent and eligant texture. Quiet and neat.
We had great expectations for this restaurant a 2 star Michelin! Overall, it was a fine experience but clearly below our expectations. Service is quite professional but pointlessly old fashioned and formal: there is truly no need to change napkins several times during the meal or change glasses for water when switching to dessert (heard about the environment? . As to the food: we had the fish/seafood focused menu. The red prawns were excellent, as well as the turbot. The bottoni pasta with cuttlefish were a bit disappointing: cuttlefish was very tasty and the chard based brown sauce wonderful but the pasta itself was a bit bland and chewy. Smoked amberjack was fine, but nothing exceptional. The dishes are subtle, too my (personal taste they lack a bit of strength in flavour. They also assemble a bit too many ingredients simplification might be welcome in favor of intensity. The chef has a bit of a sweet tooth (white chocolate, etc. . The dishes are small and overall the place lacks a sense of generosity (we had to wait for a good 15' until anything materialized on the immaculately white tablecloth . Great winelist and good counseling from the sommelier an amazing 2016 Muller Thurgau, reasonably priced by the standards of the place.
A fabulous affair; lunch took nearly 4 hours and was worth every penny (and pretty penny it was too! . We participated in the full Chef's tasting menu. Every item was a sensory delight, with great care taken to satisfy my lactose intolerant spouse, done without fuss and attention. Everyone spoke good to excellent English (my Italian is despicable , knew lots about each dish. We finished sated and excited ready for a nap or a short walk around the Duomo!
Amazing culinary experience and superb service. Would recommend.
