Water En Vuur - Diksmuide

Water en vuur is a beautiful restaurant on an old boat on the river ijzer. for anyone who was not familiar with the history of belgiens, the ijzer in diksmuide the front line while ww1 and right next to water en vuur is the ijzertoren, who died at the ijzerfront, they also got there protective trenches, and short distance in the German wars cemetery in vladslo they can see the cheese. Unfortunately, there are many other war graves and monuments in the opposite, including the memory of St. julien, reminded of the Canadian soldiers killed in the first poison gas attacks along the west front. I like water en vuur not only because of the delicious food, but also the fact that it is made with local ingredients and local beers. I like the interieur that is more industrial than jolly sailor style. the atmosphere is informal and it always seems a wide range of people who form their clientele. we do not go that regularly because it is not so local where we live in brugge, but if we live close, we would certainly go more regularly. certainly worth visiting when they are in the westhoek, but service is at Belgian speed, so they do not expect to eat a quick bite.

I can really recommend this place! Not only the setting, on a boat, but definitely the vegan food too. You can just feel the passion and honesty in the food. Even the balance of nutrients was considered, it seemed. Just loved it and worth every euro.

We've been here a couple of times over the years. It's one of the few places in the wide area that standardly has vegan options: seitan stew, grilled seitan, ... The menu has not really changed over the years (we’ve had the seitan stew on several occasions before), but given that it is prepared with vegetables from the specific season, the ingredients do vary over time. Fries are also baked in plant oil. Would like to see (more) vegan options for dessert though. Service is sometimes very slow, and a bit reserved.
