Not the most inventive preparation, but the fish was very fresh. Then we had a degustación (tasting) of laminas de salmon , and it was excellent. Very good fish paired with some inventive sauces. After that we had another tasting of nigiri, with whom my wife and I were very satisfied. Creative, well prepared, all fresh. At this point, I thought I had finally found my sushi place in Córdoba. Unfortunately, the last two plates really fell in quality. We have a sampling of sushi rolls. They were very pedestrians. Basically, the type of roles you might expect to find at a food dish in a shopping mall. At this point I decided that the restaurant probably deserved a 3. And then we tried the Peruvian chap. I put another whole star on the basis of our disappointment: the tuna was simply not fresh. It doesn't smell good and it didn't taste good. We left the whole plate unleashed. This brings the score to 2. No restaurant should serve fish that is not absolute, 100% fresh. But in a SUSHI restaurant it is completely unacceptable to use fish that is even the smallest piece away. As I have written elsewhere on TripAdvisor, when a restaurant will serve sashimi or ceviche, it must find the very freshest, highest quality fish and then treat it with absolute care and respect. I think there must be a problem with the Argentine supply chains for fish. Since fish is frozen at sea, it should not be so difficult for restaurants to serve fresh fish: everyone must do it, it is between the time it is caught and the time it serves. But that never seems to happen. Always on the way, the fish is drained and let out and it begins to turn. Either this tuna was allowed to froze somewhere between the sea and the SushiWorld in any bodega, or SushiWorld itself had it too long, maybe to save a little money. I'm trying to return because the meal started so well. But I don't know if I trust the fish enough to try it again.
