There are retail BBQ operations that will serve you any day or night but this isn 't that.It IS a retail BBQ operation.It IS a southern BBQ product on your plate indeed, however,what you 'll get on your plate can only be described as artful . Chef Adam has chops, he has cred, he has vision, he has style, he deserves your consideration.His product:it 's true,it 's traditional,it 's got undeniable Texas style influence and yet,it 's close to perfect.(I 'll drink his bbq sauce from a cup with a straw however,just a dab will do ya on any given bite Everyone knows, There 's no such thing as perfect however,I consider this the closest to perfect I 've EVER had My advice:FIND A WAY to get a plate of whatever he 'll put on it for you.don 't forget dessert.(smoked walnut brownie? seriously?
