Best quesadilla in town… For real. They were swamped but quite efficient when we visited, and the food was absolutely delicious

I was disappointed with the quesadillas here. The 4.7 rating attracted me to this colorfully decorated truck right off the Main Street, but I left with a mediocre service experience and a similarly average quesadilla. The cashier was inattentive and unwelcoming. Although this did not affect the accuracy of the order, it made for an unremarkable service experience. This is my favorite restaurant/food truck in Moab. This would be a 5 star, however, there have been multiple times (at least 4 or 5) where I have planned a day specifically to hike in Moab and eat here, and they are closed. They really, REALLY, need to update their hours online.

Quesadillas are good and quite large. Spicy is actually spicy. The sauce choices were good. This place should be an indoor operation considering it is recommended as the best in Moab.
