Chimayo Mexican Grill - DILLON

Their fish tacos were excellent. someone recommended this place and we stopped after skiing and it was really delicious! fish was perfect the Chimayo sauce complimented it amazing. also ordered the chile rellenó and loved it. the staff was nice and the food came out quickly. come back to any event!

We have no photos of eating because it was so good that we have hunted it up! my friend is a vegan so we really appreciated the vegan options. she had a bean and veggie burrito. my other two friends got a meat burrito with queso up and the sworn them. I had the grilled garnel and fish tacos and it was amazing! Finally they had churros and it was so great! long story short big vibe, great eating!

This restaurant is absolutely amazing! I have been coming here since I was a child and my family still visits at least once a month. While most of the menu items are pretty standard, the fish and shrimp dishes are standout options. I highly recommend trying the Baja fish, it is delicious in tacos, burritos, and bowls. The service is quick and the restaurant is perfect for anyone looking for a tasty meal after a day of skiing or rafting.

This restaurant is similar to Chipotle but with a Baja twist. The Chimayo sauce is outstanding and the chile tortillas are fantastic! Additionally, Chimayo is close to my hometown, so it was nice to chat with the staff and learn about the owners who named the place after the town.

There is a reason why they are coming up on 25 years in business. Awesome fish tacos! I don't think I would be disappointed with anything on the menu. If your in town make sure to eat there at least once.
